A wide stainless steel blade set into a cherry wood handle, made for portioning dough and cutting rolled sheets into even noodles. It presses straight down in a single motion, giving a cleaner cut than dragging a knife across the surface.
The raised handle sits above the blade so your hand stays clear of the edge and pressure travels evenly along its length. The flat edge also lifts and turns sticky dough, and scrapes a floured bench clean afterwards.
